Simple, Wonderful Custard Pie


It doesn’t get any easier, or more satisfying than this. Delicious warm from the oven, or chilled with fresh berries. This is a recipe that has probably been around since the pioneer days or even earlier. It’s just as wonderful now.

3 eggs
3/4 cup sugar
1/4 cup butter, melted
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg or to taste
1 recipe pastry for a 9 inch single crust pie

Preheat oven to 400 degrees. Prepare pie shell and bake it for five minutes. Set aside. (It will be only partially baked.) Reduce oven temperature to 325 degrees.

Combine melted butter, sugar, flour, milk, vanilla, and nutmeg. Add beaten eggs, and blend well. Pour filling into partially baked pie shell. Bake at 325 degrees for 45 to 55 minutes, or until an inserted knife comes out clean.
