Raspberry Brown Sugar Gratin


This is, hands down, the easiest dessert I’ve ever made, and one of the most delicious! It’s downright decadent, elegant, amazing, addictive … okay, yes, I’m in love here a little. Just try it. You won’t believe how these three simple ingredients meld to make something magical!

For two servings:

1 cup fresh raspberries
1 cup sour cream
1/2 cup dark brown sugar

Preheat broiler. Combine raspberries and sour cream and turn into a shallow baking dish. (I used two small gratin dishes.) Sprinkle evenly with brown sugar. (If the brown sugar is lumpy, put through a seive first.) Broil about 4 inches from heat, watching carefully, until bubbly. Serve immediately.

The beauty of this is that the measurements aren’t important — just the proportion!
