Chocolate Fudge Pudding Cake


This is age-old comfort food at its best. There are tons of recipes out there, but this is the one I tried … and loved … last night. It’s VERY chocolatey, and requires a scoop of creamy vanilla ice cream to balance things! The ultimate hot fudge sundae! It’s also very easy to make and uses ingredients you probably have on hand.

3/4 cup all-purpose flour
2/3 cup white sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 tablespoons vegetable oil
2/3 cup packed brown sugar
1/4 cup semisweet chocolate chips
1 teaspoon vanilla extract
1 1/4 cups hot water

Vanilla ice cream or whipped cream

Preheat oven to 350 degrees. In a 1 1/2 qt. baking dish, stir together the flour, white sugar, 1/4 cup of the cocoa, baking powder and salt. Stir in the milk and oil and mix well. Sprinkle the brown sugar, remaining 1/4 cup cocoa and chocolate chips evenly over the mixture. Add the vanilla to the hot water, then pour the water over the top of it all. Resist all urges to mix. 🙂

Bake for 30 to 35 minutes, until the surface appears dry. Serve warm or at room temperature with vanilla ice cream or whipped cream.
