Chocolate Chip Cookie Pie


Easy and delicious — my favorite combo! Also known as Platte County Pie, I found this many years ago in Bon Appetit magazine, and have been making it ever since. Enjoy!

2 eggs
1/2 cup flour
1/8 tsp. salt
1 cup sugar
1 teaspoon vanilla extract
1/2 cup butter, melted
1 cup semisweet chocolate chips
1 cup chopped nuts
1 (9 inch) pastry for a 9-inch single crust pie
1 cup whipping cream

Whip cream to soft peaks and chill.

Preheat oven to 325 degrees F (165 degrees C).

In a large bowl, mix together the eggs, flour, sugar, salt, vanilla, and melted butter. Mix well. Stir in walnuts and chocolate chips. Pour into pie shell. Bake for I hour. Serve warm with whipped cream.
